  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp oil or ghee
  • Salt to taste
  • Saffron strands soaked in 2 tbsp warm milk (optional)

Instructions:

  1. Cook the Rice:

    • Bring a pot of water to a boil with a pinch of salt.
    • Add the soaked rice and cook until 70% done. Drain and set aside.
  2. Prepare the Veggies:

    • Heat oil or ghee in a large pan.
    • Add bay leaf, cloves, cardamoms, cinnamon, and cumin seeds. Sauté for 30 seconds until fragrant.
    • Add sliced onions and sauté until golden brown.

  3. Cook the Masala:

    • Drizzle saffron milk over the top if using.
  5. Dum Cooking:

    • Cover the pan with a tight lid and cook on low heat for 15 minutes to allow the flavors to blend.

    • Gently fluff the rice and serve hot with raita and papad.
