Veggie Biryani Recipe: A Fragrant Delight

Ingredients:
- 1 cup basmati rice, soaked for 30 minutes

- 1-inch ginger, grated

- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp red chili powder (optional)
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp oil or ghee
- Salt to taste
- Saffron strands soaked in 2 tbsp warm milk (optional)
Instructions:

Cook the Rice:
- Bring a pot of water to a boil with a pinch of salt.
- Add the soaked rice and cook until 70% done. Drain and set aside.

Prepare the Veggies:
- Heat oil or ghee in a large pan.
- Add bay leaf, cloves, cardamoms, cinnamon, and cumin seeds. Sauté for 30 seconds until fragrant.
- Add sliced onions and sauté until golden brown.
- Stir in ginger, garlic, and green chilies. Cook for another minute.

- Add chopped tomatoes and cook until they soften.
- Stir in coriander powder, turmeric, red chili powder, and salt. Cook for 2 minutes.
